Fish Tower with Aligned Prawns

120 gms Basa Fillet
80 gms Salami
30 gms Prawn
1 tbsp Chopped Onion and Garlic
¼ tsp Parsley
50 gms Potato
20 ml Apple Juice
½ tsp Rosemary
First of all, for the potato fondant, peel the potato and seal it with rosemary.
Then put the potato with apple juice in the oven along for 45 minutes.
After that make spinach puree and carrot coulis.
Grill the fish fillet, prawn and salami. Make a small dices of carrot, beetroot to make a salsa.
Whisk the cream and add lemon chives for the sauce.
Now make a layer of fish and salami.
Serve the dish with apple fondant potato, carrot coulis, spinach puree and garnish it with the salsa and chives.
