Lamb Shank with Fried Rice


2 tbsp     Vegetable Oil
6             Lamb Shanks, trimmed
1             Brown Onion, chopped
2 tsp       Fresh Ginger, minced
2 tsp       Fresh Garlic, minced
½ tbsp    Cumin Powder
1/8 tsp    Szechuan Powder
To taste  Salt
2 cups    Lamb Stock
400 gm   Tomatoes, chopped
To serve with     Fried Rice
For garnish     Fresh Coriander


Heat a frying pan, add oil until little bit smoky, add lamb shanks, turn around all sides to make brown in colour. Keep aside shanks.
Heat remaining oil in another pan, add onions and cook until soft, add ginger, garlic, stir while. Add tomatoes, cook 5 mins, and then add cumin powder, salt and Szechuan powder.
Add stock and shanks, cook till cook in gently simmering stock mix (approximately 1 hour).
When lamb shanks cooks, take off from the heat and thicken the sauce.
Serve lamb shanks with fried rice and sauce on the top, garnish with coriander leaves.
